Low Carb doesn’t have to mean low-taste! You can still enjoy many of your favorite treats without sabotaging your diet.
There are lots of great products available to help swap out some of the higher carb ingredients for healthier options. Working with sugar and flour alternatives takes a little bit of time, patience and creativity, but I have PERFECTED the Chocolate Chip Cookie for you!
Here it is! The decadent chocolate chip cookies of your childhood, minus the sugar!
The Best Low Carb Chocolate Chip Cookie Recipe
½ cup (1 stick) salted butter, softened
½ cup Swerve* brown sugar replacement (Erythritol)
½ cup Swerve* granulated sugar replacement (Erythritol)
2 large eggs, room temperature
1.5 tsp pure vanilla extract
2 cups almond flour*
1 tsp baking powder
1 tsp xantham gum (this is a thickening agent)
½ tsp salt
½-¾ cup Lily’s or Bake Believe (Stevia- sweetened) chocolate chips
¼ cups chopped walnuts (optional)
-Preheat oven to 350 and line a cookie sheet with parchment paper
-In a large bowl, Cream butter and sweeteners. Mix either by hand or with beaters until well combined and creamy
-Mix or beat in eggs and vanilla until well combined
-In a separate bowl, combine dry ingredients
-Add dry ingredients into the bowl with the butter mixture and mix
-Stir in chocolate chips and nuts
-Form into balls and refrigerate on cookie sheet for at least an hour
-Bake at 350 until golden, about 15 minutes
